Description

Ingredients (Makes ~8 servings):
1 lb ground beef (85/15 or leaner)
1 small head green cabbage, chopped
1 small head cauliflower, chopped
2 zucchini, sliced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 medium yellow onion, chopped
4 celery stalks, chopped
4 garlic cloves, minced
1 (14 oz) can diced tomatoes (no sugar added)
6 cups beef broth (low-sodium, no added sugar)
2 tbsp tomato paste
1 tbsp apple cider vinegar (for tang)
1 tsp smoked paprika
1 tsp dried oregano
½ tsp thyme
1 tbsp olive oil (for sautéing)
Salt and black pepper to taste
Optional: chopped parsley for garnish

Instructions:
In a large stockpot, heat olive oil over medium heat.
Add ground beef and cook until browned. Drain excess fat if needed.
Add onions, garlic, celery, and bell peppers. Sauté for 5 minutes.
Stir in cabbage, cauliflower, zucchini, diced tomatoes, tomato paste, and broth.
