Description

Ingredients:
1 large head cauliflower (about 2 pounds), cut into florets
6 slices thick-cut bacon, chopped
2 tablespoons butter
3 cloves garlic, minced
1 cup heavy cream
4 ounces cream cheese, softened
1 cup shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
2 tablespoons fresh chives, chopped (for garnish)

Instructions:
Preheat oven to 375°F (190°C).
In a large pot of salted water, blanch cauliflower florets for 3-4 minutes until slightly tender but still firm. Drain well and pat dry with paper towels.
In a large skillet over medium heat, cook chopped bacon until crispy. Remove bacon with a slotted spoon and set aside, reserving 1 tablespoon of bacon fat in the pan.
Add butter to the bacon fat in the skillet. Once melted, add minced garlic and sauté for 30 seconds until fragrant.
Reduce heat to medium-low. Add heavy cream and softened cream cheese to the skillet, whisking constantly until smooth.
Stir in half of the cheddar cheese and half of the Parmesan cheese until melted and sauce is smooth.
Add dried thyme, smoked paprika, cayenne pepper (if using), salt, and black pepper. Stir to combine.
In a 9x13 inch baking dish, arrange the blanched cauliflower florets. Pour the cheese sauce over the cauliflower.
Sprinkle with reserved bacon pieces and remaining cheddar and Parmesan cheeses.
Bake for 20-25 minutes until bubbly and golden brown on top.
Remove from oven and let rest for 5 minutes before serving.
Garnish with fresh chopped chives.
