Ingredients (Serves 4):
• 4 boneless, skinless chicken breasts (≈6 oz each), diced
• 6 slices bacon, cooked and roughly chopped
• 1 medium onion, finely chopped
• 1.5 cups shredded cheddar cheese
• 1/2 cup heavy cream
• 3 large eggs, lightly beaten
• 1/2 teaspoon garlic powder
• 1/2 teaspoon chili powder
• 1/8 teaspoon cayenne pepper (or more to taste)
• Salt and black pepper, to taste
• 1/4 cup chopped fresh chives or parsley (optional, for garnish)
Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Sauté Onion: In a skillet over medium heat, sauté the chopped onion (you may use a splash of bacon fat or a teaspoon of olive oil) until soft and translucent (about 3–4 minutes).
  3. Mix Casserole Ingredients: In a large bowl, combine the diced raw chicken, sautéed onions, chopped bacon, shredded cheddar cheese, heavy cream, and beaten eggs. Add garlic powder, chili powder, cayenne, salt, and black pepper. Mix thoroughly so that all pieces are evenly coated with the spices and cream mixture.
  4. Bake: Transfer the mixture into a greased 9×9-inch casserole dish. Smooth the top with a spatula and bake for 25–30 minutes, or until the casserole is set and the top is lightly golden.
